Mango Sago Pomelo with agar agar
We are planning for potluck session in office.. As I could not cook very well, I thought to make some mango sago with pomelo. This time I will try to add some agar agar to add more texture to it.. in some website, they added bird's nest.. hee hee
Ingredients
Adapted from Noobcook (http://www.noobcook.com/mango-sago-pomelo/)
- 1 litre mango juice (I have used Marigold PeelFresh Tropical Mango)
- 250ml evaporated milk
- 3 medium ripe honey mangoes, cubed (it seems not in season)
- sugar syrup by mixing 2 tbsp caster sugar with just enough hot water to dissolve
- 100g sago pearls (I used more sago pearls as I loved them)
- Pomelo, peeled and sacs separated, about 50g or more (I used more too as I loooooved them)
Directions
1) Boil a pot of water to boil. Add sago and boil for 5 minutes then simmer for about 10 minutes. Turn off the stove, cover the pot with lid and let the sago continue in the pot for about 10 minutes, until all the sago turns translucent. Run the cooked sago through a fine sieve and running water to remove excess starch. Set aside. (I have poured them into my mango juice as time is tight)
2) Boil a pot of water and prepare the agar agar according to the packaging. Chill and cubed.
3) Reserve one of the mango (cubed) for garnishing. In a blender, (I have no blender so I have mashed them with fork), blend the rest of the mangoes and the evaporated milk for a while till well mixed.
4) Mix mango smoothie prepared with mango juice. Add sugar syrup to taste (if necessary). Chill in fridge.
5) To serve, garnish with pomelo sacs, cubed mangoes and agar agar.
